Schumann Ranch, 10046 E US Highway 290 (click for Google Maps). Ranch entrance is next to Schumann Granite, located between Fredericksburg and Stonewall on US-290.



Friday, Feb 16: HCBA Member & BBQ Team PreParty & Washer Tourney

Preparty starts at 5pm. BYOB.
Friends and family of the BBQ teams and HCBA members only.
Event entry $10 at the gate. 
Washer Tournament begins at 6 pm. 
Register at the Washer Tourney table by 5:30pm.  
$30 per team of 2.  Winner awarded cash - half of the entry pot!

Cook-Off Teams Information:

  • Teams may arrive anytime on Friday after 1 pm. Head cooks meeting @ 5pm.
  • Bring plenty of food and drink to share with guests
  • Entry fees per team are $200 and $250 after Feb 2, includes two t-shirts and entry into chicken, brisket and ribs
  • Jackpot entry fees are $25 each (chili, dessert, cook's choice, beans, margaritas)
  • Jackpot winners take half of the pot
  • Extra t-shirts are $25 each
  • Port-o-potty rentals are available for your site, cost is $100 to reserve. Contact HCBA.
  • Turn in times have a 20 minute window (ie. ribs due @ 1pm, turn in 12:50-1:10pm)
  • Dessert must be cooked from scratch on site in a Dutch Oven on the BBQ pit
  • All teams must set up a 3 step cooking utensils sanitation station AND hand sanitization station
    (see BBQ teams packets from HCBA for Gillespie County Health Dept. specifications)
  • Not an official sanctioned BBQ event
  • Teams are welcome to bring an RV, travel trailer or tent for overnight stay on Friday night. Please note - no hook ups or electricity are available.


Rules: BYOB only. Must be 21 to drink. Cooking sites assigned prior to arrival. Space assigned based on availability. Each team responsible for their own equipment and ingredients. Water and electricity are NOT provided. All meat must be brought in RAW. No pre-marinating, pre-soaking or pre-spicing. All prep must be done on site. Any commercial or homeade pit/smoker may be used with only wood for cooking. NO gas. No electric heat cooking. Gas lighters are ok. No garnish or sauce allowed. Keep it sanitary. There will be double-blind judging with a head judge and groups of volnteer food judges. Head cooks may not volunteer to judge. All teams must set up a 3 step cooking utensils sanitation station AND hand sanitization station (see BBQ teams packets from HCBA for Gillespie County Health Dept. specifications)

Turn in quantities & requirements: 

  • 7 brisket slices 1/4 to 3/8 inch thick, laid east to west
  • 7 pork spare ribs, laid east to west, layered ok
  • 2 chicken halves, non dis-jointed, skin on
  • 1 cup of beans, cup is provided, no ingredients bigger than the beans
  • CASI chili rules apply to jackpot chili contest
  • Margarita, cups provided
  • Dessert, enough for 25 bites, must be cooked in a Dutch Oven on the BBQ pit
  • Cooks Choice, enough for 25 bites
